Raspberry Walnut Salad



This is a wonderful summer salad.  It’s quick and easy and sure to please the crowd.  In general, I use the entire head of red leaf lettuce and two avocados.  The salad dressing is also great on other “sweet” salads.  Enjoy!


Raspberry Walnut Salad

Yields:  12 servings



4 cups torn Boston lettuce

4 cups torn red leaf lettuce

¾ cups walnuts, chopped and toasted

1 cup fresh raspberries

1 Hass avocado, cubed

1-2 kiwi fruit, sliced



Combine all ingredients in a large bowl, toss gently before serving.  Serve with Raspberry Salad Dressing



Raspberry Salad Dressing

Yields:  1 ½ cups



1/3 cup seedless raspberry jam

1/3 cup raspberry vinegar

1 cup extra virgin olive oil

1 tablespoon poppy seeds



Combine jam and vinegar in the container of an electric blender or food processes; process for 20 seconds.  With blender or food processor on high, gradually add olive oil in a slow, steady stream.  Stir in poppy seeds.
